
Dan, Winter Park Honey’s Manager, just turned 34 and his wife carmen made him a birthday cake. And, of course, one of the ingredients was honey! All recipes are better when honey is substituted for sugar. Just make sure to
(1) use less honey because honey is sweeter than sugar (about 1/2 – 3/4 cup for each cup of sugar),
(2) use less liquid (for every 1 cup of honey, subtract 1/4 cup of liquid from the recipe), and
(3) since honey is somewhat acidic, when baking, you will need to add 1/4 – 1/2 tsp baking soda per cup of honey so it will rise.
